For me, soups are always a nice treat. It’s a perfect way to use up leftover vegetables and other foods that are living their last days. And not to mention soups are weight-loss friendly too!
Here’s a lovely soup recipe that will not only fill you up but will be a hit at the dinner table! Eat as a main meal for lunch or dinner. Or maybe as a perfect starter for the weekend.
- 200-300 g spinach
- 1 medium carrot, cut into cubes
- 1 medium sweet potato, cut into cubes
- A bunch of spring onions, chopped
- Knob of butter or 2 tbsp olive oil/coconut oil
- 1 dl cream
- 2 chicken or vegetable stock cubes
- 1-liter boiling water
- Pinch cayenne pepper
- 2 tsp nutmeg
- 2 tsp smoked paprika
- 2 tsp garlic granules
- 6 bacon, crispy and chopped
- Salt and pepper to taste
Cook the bacon on a baking sheet on 240 degrees until crispy, set aside.
Melt butter in a large saucepan and add the carrot, sweet potato, and spring onions. Cover for about 10 minutes on low to medium heat.
Add stock cubes to the boiling water and add to the saucepan. Let it simmer for 10-15 minutes until the vegetables are soft.
Toss in the spinach and let it cook for 2 minutes. Take the soup away from heat and add in all the spices and blend until you get a smooth mixture. Add in the cream and bacon and serve!
