Most people don’t want to think of what to cook for their meals and this one factor why so many of us turn to easy solutions such as McDonalds down the street, the pizzeria a few blocks away or simply all the surprisingly good looking meals in the supermarket aisles.
Now, this is ok, not great, but ok from time to time. But if this happens more than a few times a week, you should reconsider your priorities; that is in my opinion.
A lot of people ´complain´that cooking healthy takes too long, they don’t have time, they don’t know how to cook or as simple as it “healthy food doesn’t taste nice”. Well, I have been one of those people, especially regards to the “healthy food doesn’t taste nice” – it took me a long time before I learnt how to use spices to make the healthier meals taste even more amazing than a pizza! Before you think I’m talking crazy, I want to reassure you it can be done. If you have ever been down to the spice aisle you can see there is a huge variety of flavours of the world – and they give you great taste sensation if used correctly. You don’t always have to have “unhealthy” or less nutrient dense ingredients to make food taste like a taste sensation. Bare in mind if you change your way of eating – modify the foods you eat every day – your taste buds will change too. But if you say you don’t wanna eat broccoli every day because you get “fed up” with the taste, it is as simple as just switching up the greens you eat, and no one ever said that you have to eat broccoli every day to lose weight or become healthy. Having a large variety of foods in your diet is very beneficial for you too, making sure you get loads of different macro and micro nutrients from each food group. Not clever to eat the same thing every day, eat a bit of everything!
Now, I have a super quick and simple nutritious recipe that tastes so good you won’t believe it until you try it! No joke. My secret is simply garlic powder/granules – it makes pretty much everything taste amazing.
I can have this for any meal of the day – it works perfectly for breakfast, lunch or as dinner. You can, of course, add any vegetables you want – I just really like it with these mentioned below, and it’s a great way to eat kale if you’re not the biggest fan of it!
- 1-2 handfuls of spinach
- 1 courgette
- 3 eggs
- ca 1/2-1 tsp of garlic granules/powder
- Sea salt and pepper to taste
- Toasted rye bread to serve with
- Coconut oil
Peel the courgette with a vegetable peeler until you hit the seeds. Toss the seedy bit away.
Heat a frying pan with coconut oil and add in the courgette strips along with the kale. Let them cook for a few minutes; you can also add a small dash of water to speed up this process. Then crack the eggs in the pan and just mix it around. Add in the garlic powder at this stage too. Using a spatula, move the eggs around with the vegetables until its cooked to your liking. Make sure you have put the rye bread in the toaster. Plate up, season with salt and pepper and serve with the toasted rye bread and butter. Enjoy!
